2 large boneless, skinless chicken breasts, cut into chunks
1 zucchini, sliced into thick rounds
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 small red onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried Italian herbs
½ tsp paprika
Salt and black pepper to taste
Optional: a squeeze of lemon juice or fresh parsley for garnish
Instructions
Chop the chicken into bite-sized chunks and place in a large bowl with zucchini, bell peppers, onion, and broccoli.
Drizzle with olive oil and season with garlic powder, Italian herbs, paprika, salt, and pepper. Mix well to coat evenly.
