  • 2 large boneless, skinless chicken breasts, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Optional: a squeeze of lemon juice or fresh parsley for garnish

Instructions

  1. Chop the chicken into bite-sized chunks and place in a large bowl with zucchini, bell peppers, onion, and broccoli.
  2. Drizzle with olive oil and season with garlic powder, Italian herbs, paprika, salt, and pepper. Mix well to coat evenly.
  3. Preheat the air fryer to 375°F (190°C). Place the chicken and veggie mix in the basket in a single layer, avoiding overcrowding.
  4. Air fry for 15–18 minutes, shaking the basket halfway through. Ensure chicken is golden and cooked through, and veggies are slightly charred.
